Amethyst Exchange is still in Cloud City and Profile. The mine is gone, but the shop is not.

You can still exchange Amethyst in Cloud City and in your profile. So not sure it's useless.

They just laid off an NPC to remove the amethyst mines, but not the shop. You can still get things with it as you still get them through archaeology.

they prob wont remove amythest fully till every 1 has the mount i suppose from that shop
