What is L1, 2, 3, 4 (and so on)?

What is L1 to 5 (or more, give or take) and how do I battle against world bosses?

They are instance of the map.

They are just basically different zones within the same map. It's to reduce lag, for example - or to find a solo training spot.

As for World Bosses, you have to go to their respective spawn points and Instance # and make sure you go to the bosses at the certain times.
