They can take time as the issue is kind of big so hold onto your patience

No one's saying that they shouldn't take the time they need. But since it has well and truly exceeded the original estimate of time, an update on progress and a new estimation of when the servers will be up is in order.

Everyone's characters have been deleted, across all servers.

But at least the servers are up. I guess you'll just need to make a new character and start from scratch!
