if the other angel have star too they will switch.
for example you inherit 10 star boa to 5 star nyssa, boa will become 5 star then nyssa will become 10 star

Did you try this? As I know they won't switch, if you inherit a 10 star boa to a 5 star nyssa, nyssa will be 10 star and boa 0 star.

- If the source angel's Evolution level is higher than the target angel's, the target angel will inherit it.

- If the target angel's Evolution level is higher than the source angel's, the target angel's Evolution level will not change. However, the source angel's Evolution level will still be reset.

- Evolution points do not transfer. The source angel's Evolution points reset after inheriting; be sure to finish the upgrade before inheriting.
